Fruit of the Forest Pie

This Fruit of the Forest Pie is a double-crust pie filled with a mixture of arrayed berries, apples, and rhubarb, coated in sugar and cornstarch to thicken the juices during baking. The pie uses a traditional baking variety apple and a combination of fresh or frozen berries, providing a sweet and tart filling with rich forest fruit flavors. It is baked until golden with a flaky crust.

Description

The Fruit of the Forest Pie combines sugar and cornstarch to coat a mix of sliced baking apples, strawberries, raspberries, blackberries, and rhubarb. The fruit is gently tossed to distribute the thickener evenly. When using frozen fruit, it requires standing time to thaw before assembling.

The fruit filling is layered into a pie crust-lined dish, topped with a second crust, sealed, and edges crimped to retain juices. Foil is used on the edges to prevent over-browning. Baking times vary depending on fresh or frozen fruit, with the pie baked until the crust is golden and the filling bubbling.

This pie offers a balance of sweetness and tartness from the mix of fruits and rhubarb, with a tender yet crisp crust providing textural contrast. It can be served warm or cooled and pairs well with cream, ice cream, or custard.

Ingredients

Servings
  • 1 cup sugar
  • 6 tablespoons cornstarch
  • 5 large apple cored and thinly sliced, baking variety, peeled
  • 16 ounces strawberry fresh or frozen, unsweetened, halved, drained
  • 16 ounces red raspberry fresh or frozen, drained
  • 16 ounces blackberry fresh or frozen, drained
  • 16 ounces rhubarb fresh or frozen, drained
  • 2 recipe pie crust

Instructions

  1. In a large mixing bowl, stir together sugar and cornstarch (or tapioca). Add fruit; gently tossing until berries are coated. When using frozen fruit allow fruit mixture to stand for 15 to 30 minutes or until fruit is thawed. Line a 9-inch pie plate with half of the pastry.
  2. Stir berry mixture, and transfer half to the crust-lined pie plate. Top with second crust, seal and crimp the edge. Repeat with second pie. To prevent over-browning, cover the edge of the pie with foil. Bake at 375 degrees F (190 degrees C) for 25 minutes when using fresh fruit, 50 minutes for frozen fruit. Remove foil. Bake for an additional 20 to 30 minutes, or until the top is golden. Cool on a wire rack.
