Fruit Pizza Cookies

These Fruit Pizza Cookies combine soft sugar cookies topped with a creamy cream cheese frosting and a colorful assortment of fresh fruits such as kiwi, raspberry, blueberry, mango, peach, and strawberry. The cookies have a tender, slightly underbaked center with golden edges, providing a delicate base for the smooth frosting and juicy fruits. This treat merges the feel of a cookie with fresh toppings, making for a sweet, textured dessert or snack that showcases seasonal fruit.

Description

Fruit Pizza Cookies start with a soft sugar cookie dough that is creamed with butter and sugar, then chilled to make rolling and shaping easier. Once baked until edges are golden and centers slightly underbaked, the cookies cool completely before being topped with a rich cream cheese frosting made from softened butter, cream cheese, powdered sugar, and vanilla. The final layer features an assortment of fresh fruits, carefully washed and dried to maintain texture and prevent sogginess.

The combination offers a sweet, slightly tangy frosting with bright, fresh fruit atop a soft cookie, balancing textures and flavors. These cookies serve well as a colorful dessert for gatherings or a special treat and can be customized with your favorite fruits.

For convenience, store-bought sugar cookie dough can be used, baked according to package directions and cooled before frosting. The dough or baked cookies freeze well, allowing for advance preparation. Cookies are best assembled with frosting and fruit on the day of serving for optimal freshness.

Ingredients

Servings

Soft Sugar Cookies:

  • 1 cup butter softened, unsalted
  • 1 1/2 cups sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt

Cream Cheese Frosting:

  • 4 Tablespoons butter salted
  • (1) ounce pkg. cream cheese (softened)
  • 2 1/2 cups powdered sugar
  • 1 teaspoon vanilla bean paste or vanilla extract

Fresh Fruits:

  • strawberry all fruits listed in notes
  • kiwi
  • raspberry
  • Blueberry
  • Mango
  • peach

Instructions

  1. Make the Sugar Cookie Dough. In a mixing bowl, cream together butter and sugar until light and fluffy, about 3-4 minutes. Beat in the egg, egg yolk, and vanilla until combined. Add flour, baking powder, and salt. Stir just until the dough comes together. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. This makes the dough easier to roll and shape.
  2. Bake the Sugar Cookies. Preheat your oven to 350 degrees. Roll the cookies in 2 ounce portions. Place them on a parchment-lined baking sheet. Bake for 8–10 minutes, or until the edges are just turning golden and the centers slightly underbaked. Let cookies cool completely on a wire rack before frosting.
  3. Make the Cream Cheese Frosting. In a bowl, beat the softened butter and cream cheese until smooth, about 3 minutes. Add in the powdered sugar and vanilla, mixing well.
  4. Prep the Fruit. Wash and dry all fresh fruit thoroughly so it doesn’t add extra moisture to your cookies.
  5. Assemble. Spread a generous layer of cream cheese frosting over the cooled cookies. Arrange the sliced fruit in a fruit pizza style on the top. For extra shine, brush with warm apricot jam or simple syrup.
  6. Store covered in the refrigerator.

Notes

  • Use strawberries, raspberries, blueberries, kiwi, mango, grapes, mandarins, peaches, or pineapple as fresh fruit toppings.
  • Store-bought sugar cookie dough can be substituted; bake as directed and cool before frosting.
  • Dough can be made ahead and frozen for 2-3 months; thaw in fridge before rolling and baking.
  • Baked sugar cookies can be frozen and thawed before frosting and assembling on the day of serving.
