Description

For convenience, store-bought sugar cookie dough can be used, baked according to package directions and cooled before frosting. The dough or baked cookies freeze well, allowing for advance preparation. Cookies are best assembled with frosting and fruit on the day of serving for optimal freshness.
Ingredients
Soft Sugar Cookies:
- 1 cup butter softened, unsalted
- 1 1/2 cups sugar
- 1 large egg
- 1 large egg yolk
- 2 teaspoons vanilla extract
- 2 1/2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
Cream Cheese Frosting:
- 4 Tablespoons butter salted
- (1) ounce pkg. cream cheese (softened)
- 2 1/2 cups powdered sugar
- 1 teaspoon vanilla bean paste or vanilla extract

- strawberry all fruits listed in notes
- kiwi
- raspberry
- Blueberry
- Mango
- peach
Instructions
- Make the Sugar Cookie Dough. In a mixing bowl, cream together butter and sugar until light and fluffy, about 3-4 minutes. Beat in the egg, egg yolk, and vanilla until combined. Add flour, baking powder, and salt. Stir just until the dough comes together. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. This makes the dough easier to roll and shape.
- Bake the Sugar Cookies. Preheat your oven to 350 degrees. Roll the cookies in 2 ounce portions. Place them on a parchment-lined baking sheet. Bake for 8–10 minutes, or until the edges are just turning golden and the centers slightly underbaked. Let cookies cool completely on a wire rack before frosting.
- Make the Cream Cheese Frosting. In a bowl, beat the softened butter and cream cheese until smooth, about 3 minutes. Add in the powdered sugar and vanilla, mixing well.
- Prep the Fruit. Wash and dry all fresh fruit thoroughly so it doesn’t add extra moisture to your cookies.
- Assemble. Spread a generous layer of cream cheese frosting over the cooled cookies. Arrange the sliced fruit in a fruit pizza style on the top. For extra shine, brush with warm apricot jam or simple syrup.
- Store covered in the refrigerator.

- Use strawberries, raspberries, blueberries, kiwi, mango, grapes, mandarins, peaches, or pineapple as fresh fruit toppings.
- Store-bought sugar cookie dough can be substituted; bake as directed and cool before frosting.
