Fruit Pizza Cookies

Fruit Pizza Cookies consist of sugar cookies topped with a creamy cream cheese frosting and fresh assorted fruits. The cookies have a firm base and are decorated with a smooth, sweet-tangy frosting that holds the sliced berries and other fruits. These individual cookie servings offer a fresh, colorful dessert combining crisp cookie texture with creamy and juicy fruit toppings.

Description

These cookies start with sugar cookie dough rolled out and cut into shapes before baking to a firm yet tender texture. After baking and cooling, they are topped with a cream cheese frosting made by mixing softened cream cheese with powdered sugar and vanilla extract until light and fluffy. The frosting is spread evenly on each cookie. Fresh fruit such as strawberries, blueberries, raspberries, kiwi, blackberries, or mandarin orange slices are chopped or sliced and arranged on top to create a visually appealing fruit pizza effect. The combination offers a balance of sweet cookie, creamy frosting, and fresh fruit flavors and textures.

The cookies are best served fresh, as the fruit adds moisture that can soften the cookies over time. They store well in an airtight container for 2-3 days if uncovered with fruit. For make-ahead options, frost the cookies but add fruit just before serving. Patting fruit dry before adding helps reduce excess moisture. Variations include using toasted sliced almonds, or substituting the cream cheese frosting with chocolate or marshmallow frosting if preferred.

Ingredients

Servings
  • sugar cookie dough or boxed sugar cookie dough your sugar cookie recipe, refrigerated
  • 8 ounces cream cheese softened
  • 2 Cups powdered sugar
  • ½ teaspoon vanilla extract
  • strawberries blueberries, raspberries, diced kiwi, blackberries, mandarin oranges, sliced

Instructions

  1. If not using refrigerated dough, prepare sugar cookie dough according to box directions or your own recipe instructions.
  2. Place a little flour on a flat surface and roll out dough to about ¼" thick.
  3. Press an egg shaped or round cookie cutter into the dough and place on a baking sheet.
  4. Bake according to package or recipe instructions, usually around 10-12 minutes.
  5. Remove from the oven and transfer to a wire rack and cool completely before icing and topping with fresh fruit.

For the cream cheese frosting:

  1. In a large mixing bowl, add the softened cream cheese and blend with an electric mixer at medium speed for about a minute until light and fluffy.
  2. Add the vanilla extract and blend to combine.
  3. Then add in powdered sugar in small batches, blending in after each addition until it is all incorporated.
  4. Chop berries and fruit into small pieces.
  5. Once the cookies are cooled completely, spread about a tablespoon of the cream cheese frosting on each cookie.
  6. Decorate with chopped fruit and berries.

Notes

  • Store the cookies in an airtight container for up to 2-3 days to maintain freshness.
  • If preparing ahead of time, frost the cookies but add the fruit toppings just before serving to prevent sogginess.
  • Pat fresh fruit dry with paper towels before adding to reduce excess moisture on the cookies.
  • Optionally sprinkle with powdered sugar or add toasted sliced almonds for extra texture.
  • You can substitute cream cheese frosting with chocolate or marshmallow frosting if desired.
