Fruit Pizza Recipe
Description
The Fruit Pizza Recipe begins by mixing butter, sugar, egg, extracts, baking powder, and flour to form a sugar cookie dough pressed into a half sheet pan. After baking until the edges turn golden, the crust is cooled completely before topping.
The filling combines vanilla pudding mix with milk and almond extract, beaten until thick, then folded carefully with whipped heavy cream to create a light, creamy layer. This pudding cream is spread evenly over the cookie crust.
Fresh fruit, such as sliced peaches, kiwi, bananas, and various berries, is then arranged on top of the creamy filling to provide natural sweetness, texture, and a colorful presentation. The dessert is chilled for 1 to 2 hours, allowing flavors to meld and the filling to set properly.
This fruit pizza is ideal served chilled as a dessert or snack. The cookie crust provides a firm but tender base, the creamy filling offers a mild vanilla flavor, and the fresh fruit adds brightness and juiciness. Cooling before serving enhances the texture and flavor balance.

For the Sugar Cookie Crust:
- 1 cup butter salted, cut into cubes
- 1 cup granulated sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 2 teaspoons baking powder
- 3 cups all-purpose flour
For the Creamy Filling:
- 3.9 oz vanilla pudding mix 1 box, instant
- 1 1/2 cups milk cold
- 3/4 teaspoon almond extract
- 1 cup heavy whipping cream
Fresh Fruit Toppers:
- Berry washed, and sliced (if needed, etc
- peach
- kiwi

Instructions
- Preheat oven to 350 F. Lightly grease a half sheet pan and set aside. Alternately, you can line with parchment paper and set aside.
- In a large bowl, beat butter and sugar until well mixed. Add the egg, vanilla extract and almond extract, and mix again.
- Slowly incorporate the flour and baking powder until a dough forms. If it looks a little crumbly, this is normal. If you squeeze some dough together in your hands, it should form a ball that keeps its shape.
- Press the dough into the prepared half sheet pan to create an even layer across the bottom and up the sides slightly.
- Bake 12 minutes or until edges are lightly golden. Let crust cool completely.
for the filling-
- In a medium bowl, beat milk, pudding mix, and almond extract together until smooth and thickened.
- In a separate medium bowl, beat heavy whipping cream until stiff peaks form.
- Gently fold cream into the pudding mixture, until no streaks appear.
- Spread pudding mixture evenly over crust.
- Top with fruit and serve.
Notes
- Refrigerate the assembled fruit pizza for 1-2 hours before serving to allow the filling to set and flavors to blend.
- Ensure the cookie crust is completely cooled before spreading the filling to prevent melting.
- Use fresh, ripe fruits for best texture and sweetness.
