Fruit Popsicles

Fruit Popsicles combine fresh pineapple, nectarines, kiwi, strawberries, and blueberries with fresh orange and pineapple juices to create vibrant frozen treats. The natural sweetness and varied textures of diced and sliced fruits suspended in juice make each popsicle colorful and flavorful. These popsicles provide a fruity, chilled snack that’s perfect for hot weather and can be easily customized with different fruit choices.

Description

This recipe involves cutting various fresh fruits into small pieces and placing them in molds or cups, then filling them with freshly squeezed orange and pineapple juice, leaving room at the top for expansion during freezing. The molds are wrapped with plastic wrap to secure craft sticks in place and then frozen until firm, creating individual frozen popsicles with a mix of soft, juicy fruit and sweet juice.

The texture is both icy and tender from the fruit pieces, offering a refreshing snack. Different fruits can be substituted or added as desired for variety. Once frozen, running the molds briefly under warm water helps release the popsicles easily.

Ingredients

Servings
  • pineapple
  • nectarines
  • kiwi

For liquids:

  • orange juice freshly squeezed
  • pineapple juice

Instructions

  1. Gather all the ingredients. Adjust the amount of fruits according to your liking. You can also add watermelon, mango, raspberries, peaches, etc. I use these Tovolo Groovy Ice Pop Molds and paper cups.
  2. Cut the pineapple and save the juice. Squeeze fresh oranges to make juice (or you can use store-bought orange juice). Dice pineapples and nectarines and slice kiwis and strawberries. Place the fruits in molds/cups and add the liquids leaving ½ inch (1.3 cm) at the top.
  3. Wrap each mold/cup with plastic wrap. Snip the plastic wrap on top of molds with scissors and insert craft sticks into each mold/cup. Place in the freezer for a few hours until firm.
  4. To remove the Popsicles from the molds/cups, run under hot water until they are easily released.
