Fruit & Prune Lumberjack Cake

Fruit & Prune Lumberjack Cake is a moist baked dessert combining chopped prunes soaked in hot water and baking soda with peeled chopped apples, honey, coconut oil, and aromatic vanilla. The batter is leavened with baking powder and baking soda, resulting in a tender crumb with sweet, fruity bursts. The prunes and apples add natural sweetness and texture, making the cake both flavorful and wholesome.

Description

This cake starts by soaking finely chopped prunes in hot water with baking soda to soften and infuse them, which adds moisture and a rich fruity base. The dry ingredients include flour, baking powder, and salt, combined separately. The wet ingredients — honey, egg, vanilla extract, and melted coconut oil — are beaten together before gently folding in the prune soak and then the chopped apples. The mixture is carefully combined to maintain a light texture.

Baked in a greased 7-inch round pan at 350°F for 45-50 minutes, the cake develops a lightly golden crust with a moist interior punctuated by tender fruit pieces. The use of coconut oil and honey gives subtle flavor and moistness without heavy fats.

This cake is a suitable option for those seeking a fruit-forward, naturally sweetened dessert with autumnal flavors from apple and prune. It can be served sliced plain or with a light accompaniment like yogurt or cream.
