Fudge Filled Cookies

Fudge Filled Cookies are ultra soft and tender brown sugar cream cheese cookies with a secret rich chocolate fudge filling inside. As tasty as they are fun!

Servings

For the fudge:

  • 1 1/2 cups semisweet chocolate chips 255 grams
  • 1/2 sweetened condensed milk

For the cookies:

  • 4 cups all-purpose flour 508 grams
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon (optional)
  • 2 ticks unsalted butter at cool room temperature, 226 grams
  • 4 ounces cream cheese at room temperature
  • 2 cups light brown sugar packed, 400 grams
  • 2 egg large
  • 2 teaspoons vanilla extract

Instructions

For the fudge:

  1. In a small saucepan set over low heat, combine the chocolate chips and sweetened condensed milk. Heat until melted and smooth. Remove from heat and let cool.

For the cookies:

  1. Preheat the oven to 350° F. Line large baking sheets with parchment paper or silicone baking mats.
  2. In a medium bowl, whisk the flour, baking powder, baking soda, salt, and cinnamon to combine.
  3. In the bowl of an electric mixer, beat the butter, cream cheese, and brown sugar on medium speed until light and fluffy, about 3 minutes. Scrape down the bottom and sides of the bowl. Add the eggs and vanilla and beat until combined. On low speed, gradually add the flour mixture and beat until incorporated.
  4. Scoop a heaping tablespoon of cookie dough and flatten into a disk. Scoop a 1/2 teaspoon of the fudge in the center of each disk of dough. Cover with another heaping tablespoon of cookie dough. Repeat for the remaining dough and fudge.
  5. Bake for about 12 minutes, or until golden brown. Allow to cool for 10-15 minutes before serving, or moving to a wire rack to cool completely. Best served warm!
