Description

The Fudgesicles recipe starts by combining brown sugar, cocoa powder, and cornstarch in a saucepan before slowly mixing in milk. The mixture is cooked over medium heat, stirring constantly until it thickens. After cooling slightly, the chocolate mixture is poured into popsicle molds and frozen until firm.

The cornstarch acts as a thickener, giving the fudgesicles a creamy texture that sets well in the freezer versus simple ice pops. The use of 2% milk balances richness with lightness, and the brown sugar adds a deep caramel flavor complementing the cocoa.

Ingredients

  • 3 cups milk 2%
  • ½ cup brown sugar
  • ¼ cup cocoa powder unsweetened
  • 2 tablespoons cornstarch

Instructions

  1. In a medium saucepan, before turning on the stove, mix together the brown sugar, cocoa, and cornstarch.
  2. Slowly add in 1/2 cup of milk and whisk until the mixture is smooth.
  3. Place the pan over medium heat, and stir continuously while adding in the remaining milk.
  4. Once the mixture has started to thicken (about 7-10 min), turn off the stove and remove the pan from the heat while still stirring. Let the chocolate mixture cool for a few minutes.
  5. Transfer the chocolate mixture into a spouted measuring cup. (This will make pouring it easier.) Then fill the popsicle molds almost to the top. Insert the sticks or mold tops and freeze for 6 hours or overnight.
  6. When your ready to eat, take out a fudgesicle and enjoy! If you have any trouble getting the pops to release from the mold, run the bottom of the mold under warm water just until the pop releases.
