Fudgy Brownie Bites
Description
This recipe begins by whipping eggs and sugar until light and fluffy, which introduces air for a tender crumb. Melted semi-sweet chocolate and butter are folded in with vanilla extract, building a rich chocolate base. Cocoa powder, flour, and salt are gently folded in to maintain fudginess without overworking the batter. The thick mixture is portioned into a greased mini muffin pan and baked at 350°F for about 15–17 minutes. Cooling completely before removing ensures the brownies hold shape without crumbling.
The resulting brownie bites are dense and moist with a deep chocolate taste, suitable as finger-friendly treats or dessert accompaniments. They are convenient for portion-controlled indulgence.
These brownies can be customized by substituting semi-sweet chocolate with chips and can be made gluten-free using alternative flour blends.
Ingredients
- 2 egg
- 1 cup sugar
- 4 oz semi-sweet chocolate bar form
- 8 tbsp butter unsalted
- 2 tsp vanilla extract
- 1/3 cup cocoa powder unsweetened
- 1/4 cup all-purpose flour
- 1/4 tsp salt
Instructions
- Preheat oven to 350F. Add eggs and sugar to a large mixing bowl and mix with an electric mixer. Mix until light and fluffy - about 3 minutes.
- Chop chocolate bar into chunks and melt with butter in the microwave or over a double boiler. Only warm until the butter is just melted. Mix until evenly combined and pour chocolate and butter mixture into the eggs and sugar along with the vanilla extract. Mix again with the electric mixer.
- Add cocoa powder, flour, and salt to the bowl and fold in with a spatula. Mix until the dry ingredients are just folded in.
- Grease a mini muffin pan (or use muffin lines) and add 2 tbsp of batter to each of 24 muffin slots. Place in the oven and bake at 350F for 15-17 minutes. Remove from the oven and allow to cool COMPLETELY before removing from the muffin pan. Removing from the pan prior to cooling may make them crumble.
Notes
- Chocolate chips can replace the chopped chocolate bar for ease of preparation.
- Use a gluten-free flour blend instead of all-purpose flour to make the brownies gluten-free.
- Allow brownies to cool completely before removing from the pan to prevent crumbling.
