Funfetti Cookie Dough Truffles

Funfetti cookie dough is rolled into tasty truffles in this easy dessert recipe. Dipped in white chocolate and covered in sprinkles, these Funfetti Sprinkles are a hit for birthday and graduation parties!

Ingredients

  • 4 ounces cream cheese softened
  • ½ cup butter softened, unsalted
  • ¾ cup granulated sugar
  • 1 cup all-purpose flour heat treated
  • ¼ teaspoon kosher salt
  • 1 teaspoon vanilla extract pure
  • 16 ounce white chocolate wafers melted, Ghirardelli brand
  • ½ cup Sprinkles divided

Instructions

  1. Beat butter and cream cheese in a large mixing bowl for 2-3 minutes until creamy. Beat in sugar, flour, salt and vanilla until completely combined. Fold in 1/4 cup sprinkles.
  2. Drop by one tablespoon scoop onto a parchment paper lined freezer safe cookie sheet. Freeze truffles for about 2 hours.
  3. Using a toothpick, dip frozen truffle into melted vanilla coating. Tap on side of bowl to remove excess. Immediately add remaining sprinkles for garnish.

Notes

  • Be sure to use heat treated flour in this recipe!
  • Freeze completely. Rolled cookie dough needs at least 2 hours in the freezer to become completely solid. If you don’t give them enough time they will not hold their shape well when you try to dip them.
  • Place parchment paper or foil under your bowl. It will catch any stray chocolate sparing your counter tops from becoming a sticky mess.
  • Use a toothpick. Spear each frozen truffle ball with a toothpick for easy dipping that won’t get your hands (quite as) messy.
  • Remove excess chocolate. Tap each dipped truffle against the side of the bowl gently before adding sprinkles. This helps the white chocolate coating set up in a smooth even layer.
