Funfetti Cookies

Funfetti Cookies are sugar cookie dough studded with colorful sprinkles, made by blending melted butter and sugar, then combining with eggs, vanilla, and dry ingredients including flour, cornstarch, baking powder and soda. Chilled before baking, they bake at 350°F until set with a soft interior and sweet sprinkle bursts, stored best in an airtight container.

Description

This Funfetti Cookies recipe begins with melted, cooled unsalted butter combined with granulated sugar, then eggs and vanilla extract are incorporated to create a smooth wet base. A dry mixture of all-purpose flour, cornstarch, baking powder, baking soda, and salt is whisked separately and gradually folded into the wet ingredients. Vibrant sprinkles are folded into the dough, which is then chilled for at least 30 minutes to firm up and improve texture.

Cookies are portioned into rounded scoops or rolled balls spaced on parchment-lined baking sheets and baked at 350°F for 10–12 minutes. The finished cookies have a tender crumb with bursts of color and sweetness from the sprinkles evenly distributed throughout. Chilling the dough helps prevent spreading and maintains their round shape.

For storage, keep the cookies in an airtight container at room temperature for up to five days to maintain freshness. The method produces a classic soft sugar cookie enhanced with texture and visual appeal from the sprinkles.

Ingredients

Servings
  • 1 cup butter melted and cooled until no longer warm to the touch, unsalted
  • 1 ⅔ cup granulated sugar
  • 2 egg room temperature preferred, large
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 Tablespoon cornstarch
  • 1 teaspoon baking powder
  • ¾ teaspoon baking soda
  • 1 teaspoon table salt
  • cup Sprinkles nonpareils, quins, jimmies, or a mix

Instructions

  1. Combine melted, cooled butter with sugar and stir until combined.
  2. Add eggs and vanilla extract, stir well.
  3. In a separate bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt until thoroughly combined.
  4. Gradually stir dry ingredients into wet until completely combined.
  5. Stir in sprinkles until well-distributed through the dough.
  6. Cover bowl with plastic wrap and chill in the refrigerator for at least 30 minutes and up to 5 days (dough chilled longer than a few hours may need to sit at room temperature for a bit to become soft enough to scoop easily).
  7. When nearly ready to bake, preheat oven to 350F (175C) and line a baking sheet with parchment paper.
  8. Scoop dough by rounded 1 ½ Tablespoon-sized scoops and drop onto baking sheet (or roll the dough into smooth balls between your palms for rounder, more uniform cookies) spacing cookies at least 2” (5cm) apart.
  9. Transfer baking sheet to 350F (175C) preheated oven and bake cookies for 10-12 minutes. Cookies may look slightly underdone when they come out of the oven, this is fine and makes them nice and chewy as they continue to cook on the baking sheet as they cool. Let them cool completely on the baking sheet before removing as they’re fragile when warm!

Notes

  • Store Funfetti cookies in an airtight container at room temperature to keep freshness for up to five days.
