The Furikake Fries recipe starts with either homemade thick fries cut from varieties like Yukon Gold, Russet, or King Edward potatoes or frozen French fries. For homemade fries, soaking the cut potatoes in cold water with white or apple cider vinegar for at least 30 minutes removes excess starch and helps achieve a crispier texture. After drying, the fries are coated with a neutral oil and baked initially at a moderate oven temperature and then finished at a higher heat to develop a golden, crispy crust.

The furikake seasoning, a Japanese condiment typically including seaweed, sesame seeds, and salt, is sprinkled onto the fries after baking, imparting a savory, slightly nutty flavor that sets these fries apart. The cooking method ensures the fries have a tender inside with a well-coated surface of seasoning.

  • 4 potato see notes 1&2, large
  • 2 tablespoon white vinegar (see note 3)
  • ¼ cup neutral cooking oil see note 4, generic cooking oil

If using Frozen Fries

  • 1 lb French Fries see note 2, frozen

Seasoning

  • 3 tablespoon Furikake Seasoning

Instructions

For homemade fries in oven/air fryer (See below for frozen fries)

  1. Cut the potatoes into thick slices and then cut into even-sized fries.4 large potatoes
  2. Transfer to a large bowl and cover with cold water, add the vinegar and leave to soak for at least 30 minutes, but you can leave them for a couple of hours.2 tbsp white vinegar

OVEN COOKING

  1. Preheat the oven to 375ºF/190°C
  2. Drain and rinse the potatoes, then dry well on a clean tea towel.
  3. Place the potatoes in a dry bowl and pour over the oil.¼ cup / 60 ml oil
  4. Turn the potatoes with your hands until they are all evenly coated.
  5. Place two baking sheets in the oven to heat up.
  6. Remove the trays from the oven and line them with parchment/cooking paper.
  7. Add the potatoes to the baking sheet in a single layer.
  8. Bake the potatoes in the middle to bottom of the oven for 25 minutes. Increase the heat to 425ºF/220ºC and cook for a further 20 minutes.
  9. Remove the potatoes from the oven, tip into a bowl, and sprinkle with the furikake seasoning while they are still hot.3 tbsp furikake seasoning

AIR FRYER COOKING

  1. Preheat your air fryer to 375ºF/190ºC and your oven to 200ºF/90ºC
  2. Drain and rinse the potatoes, then dry well on a clean tea towel.
  3. Place the potatoes in a dry bowl and pour over the oil.¼ cup / 60 ml oil
  4. Turn the potatoes with your hands until they are all evenly coated.
  5. Add the first batch of fries to the bottom of the air fryer basket, making sure not to stack them on top of each other.
  6. Cook for 15 minutes until crispy and golden brown.
  7. Place the cooked fries on a rack on a baking sheet.
  8. Place in the warm oven while you cook the other batches of fries.
  9. Once you are done with all the potatoes, remove them from the oven, tip into a bowl, and sprinkle with the furikake seasoning while they are still hot.3 tbsp furikake seasoning

For Frozen French Fries (See above for homemade fries)

  1. Cook the fries as per the packet instructions.1 lb / 450 g frozen french fries
  2. To make the most of your frozen fries, preheat your oven/air fryer and don't allow the fries to defrost beforehand.
  3. If you can, bake the frozen fries on an oven rack to ensures they cook evenly.
  4. Once cooked, sprinkle with the furikake seasoning and serve.3 tbsp furikake seasoning

  • Choose potato varieties like Yukon Gold, Russet, or King Edward for ideal texture.
  • Soak fresh-cut fries in cold water with vinegar to improve crispiness.
  • Vegetable oil can be substituted with olive, canola, sunflower, or melted coconut oil.
  • Frozen fries can be used for a quicker alternative but still benefit from furikake seasoning.
