Fuži

Fuži are a type of traditional Istrian pasta. They are specific due to their shape and they resemble small flutes or spindles.

Fuži

  • 2 cups hard flour (or bread flour)
  • 2 egg
  • 1 tablespoon neutral cooking oil generic cooking oil
  • 2 tablespoons white wine
  • salt

Sauce

  • 2 cups tomato sauce
  • 1 teaspoon olive oil
  • 2 cloves garlic
  • ½ tablespoon rosemary
  • 1 teaspoon red pepper
  • black pepper

Instructions

Fuži

  1. Put the flour into a large bowl. Make a small well in the center and then add eggs, oil, and wine.
  2. Add just a bit of water.
  3. Mix all the ingredients into a dough and then start kneading.
  4. Sprinkle a little flour on the table. Remove the dough from the bowl and knead it a couple more minutes on the table until it is firm.
  5. Roll out the dough. Once it is thin, cut into strips of approximately 1½ inch (3 to 4 cm) and then cut the strips into squares (approximately 1½ inch / 3 to 4 cm).
  6. Take a wooden spoon, and place its handle on one square of the dough.
  7. Fold its opposite ends over each other.
  8. Press them with the finger to stick them together.
  9. Add a bit of water to the one end, it will help the dough to stick better.
  10. Repeat the folding method with all the dough.
  11. Set aside for around 10 to 15 minutes to dry.
  12. Cook the fuži in boiling and salted water for 15 to 20 minutes, depending on their thickness.

Sauce

  1. Put olive oil into a large pan.
  2. Add the red pepper and garlic. Stir and simmer for 2 minutes.
  3. Add the tomato sauce and rosemary and cook all the ingredients for about 30 minutes.
  4. At the end of the cooking, add a bit of salt and black pepper.
  5. Stir for a few minutes then turn the heat off and serve the fuži with sauce.
