Galbi (Korean BBQ Beef Short Ribs)
Description
Galbi (Korean BBQ Beef Short Ribs) uses good quality English cut beef short ribs trimmed and butterflied to 1/4 to 1/2 inch thickness. The marinade is a balanced blend of soy sauce, water, sugars, honey, rice wine or mirin, grated Korean pear and onion, garlic, ginger, sesame oil, and black pepper. The grated pear and onion provide natural enzymes that tenderize the meat while adding subtle sweetness.
After marinating for at least six hours, preferably overnight, the ribs are grilled over medium-high to high heat, ideally on charcoal for authentic smoky flavor. The grilling is brief, about 2-3 minutes per side, to achieve nicely charred edges and a juicy interior. The resulting dish delivers tender, flavorful ribs with a sweet-savory glaze characteristic of Korean barbecue.
These ribs can also be broiled in the oven for convenience, taking care to char the meat evenly on both sides. Proper marinating and quick grilling are key to good texture and flavor.
Ingredients
- 3-4 pounds beef short ribs good quality English cut
Marinade:
- ½ cup soy sauce
- 1/2 cup water
- ¼ cup sugar
- 2 tablespoons honey
- ¼ cup rice wine or mirin
- ¼ cup Korean pear about 1/2 medium, grated
- ¼ cup onion about 1/2 medium, grated
- 2 tablespoons garlic minced
- 1 teaspoon ginger minced
- 2 tablespoons sesame oil
- ½ teaspoon black pepper
Instructions
- Rinse the ribs and drain water. Trim excess fat. Butterfly the short ribs so the meat is 1/4 to 1/2-inch thick. (See below for the instructions.)
- Mix all marinade ingredients well. Marinate the meat for at least 6 hours (overnight for best results). The thicker the meat the longer you'll want to marinate.
- It's best to grill over charcoal or wood charcoal (sootbul), but a gas grill works well too. Grill over medium high to high heat, turning only once, 2 - 3 minutes on each side. Make sure to preheat the grill for nice grill marks.
Notes
- For broiling, preheat the oven’s broiler and place the meat on the top rack about 6 inches below the heating element.
- Broil the ribs for 5–6 minutes on one side, then flip and broil for 3–4 minutes until nicely charred.
