Gandules Guisados

Gandules Guisados is a savory pigeon pea stew cooked with sofrito, tomato sauce, and seasonings such as Sazon and chicken bouillon. The peas simmer until thickened and infused with the fragrant sofrito blend, yielding a hearty dish often served over white rice. The stew can be adjusted for thickness by simmering uncovered or adding more liquid.

Description

Gandules Guisados uses canned pigeon peas cooked with a base of olive oil and sofrito, which typically includes garlic, onions, peppers, and herbs finely blended. The addition of Sazon seasoning and chicken bouillon imparts depth and savory notes, while tomato sauce adds body and subtle sweetness. Water helps control consistency during simmering.

The dish develops flavor as it simmers, melding the ingredients and thickening to desired texture. It's traditionally enjoyed poured over long grain white rice, making it a comforting, filling meal with balanced savory and aromatic qualities.

The recipe allows for adjusting liquid levels depending on whether a soupier or thicker bean stew is preferred. Leftovers can be refrigerated for up to four days or frozen for longer storage.
