Garden Tomato Sauce

Garden Tomato Sauce is a chunky, fresh tomato sauce made from peeled, seeded, and diced plum tomatoes simmered with garlic, olive oil, red pepper flakes, and fresh basil. The sauce balances savory garlic and a touch of heat with the bright acidity of fresh tomatoes. It can be enjoyed chunky or partially pureed, making it a versatile base for pasta or other dishes.

Description

This sauce begins with fresh plum tomatoes peeled by blanching in boiling water and cooling to ease skin removal. The tomatoes are then seeded and diced finely for a fresh, textured sauce. Garlic is sautéed in olive oil until golden before adding crushed red pepper flakes for subtle heat.

Tomatoes are added to the pot and cooked over low heat partially covered for 25 minutes, allowing the flavors to meld and the sauce to thicken. Seasoning with kosher salt and black pepper balances the acidity and enhances the tomato flavor. Fresh chopped basil is stirred in at the end to impart herbal brightness.

The sauce can be served chunky or partially pureed depending on preference. It complements pasta well as a bright, home-made tomato sauce during the tomato harvest season.

  • 8 cups (5 lbs) plum tomatoes peeled, seeded and diced
  • 2 tablespoons extra virgin olive oil
  • 4 cloves garlic (chopped)
  • pinch red pepper flakes crushed
  • 1 1/2 teaspoons kosher salt
  • black pepper (to taste)
  • 3 tablespoons basil chopped, fresh

Instructions

  1. To peel the tomatoes, bring a large pot of water to boil.
  2. Slice an X on the bottom of each tomato.
  3. When boiling, drop the tomatoes in the water to blanch 1 to 2 minutes, or until the skin cracks.
  4. Quickly remove from the water and let them cool a few minutes until they are cool enough to handle, the skin will come right off.
  5. Dice the tomatoes fine.
  6. Heat the oil in a heavy pot over medium heat. When hot add the garlic and saute until golden brown.
  7. Add red pepper flakes and cook 1 minute. Stir in tomatoes. Season with salt and pepper. Partially cover and cook low heat 25 minutes.
  8. Add the basil and remove from heat. I like it chunky, if you like it smooth, you can puree part of the sauce after. Serve over your favorite pasta.

Notes

  • This quantity makes about 6 cups of sauce, suitable for multiple servings.
