Garlic and Parsley Roasted Carrots are made by roasting two-inch carrot chunks tossed in olive oil, crushed garlic cloves, salt, and black pepper at a high temperature. The carrots develop a tender texture and a gentle caramelization over approximately 35 minutes, with stirring halfway to ensure even cooking and color. Chopped fresh parsley added after roasting brings a fresh herbal note that contrasts with the rich roasted flavors.

Ingredients
- 5 carrot peeled
- 2 tablespoon olive oil
- 3 garlic crushed, clove
- 1 pinch sea salt
- 1 pinch black pepper
- 1 handful parsley finely chopped, fresh
Instructions
- Preheat your oven to 220℃/200°C(fan)/425℉/Gas 7.
- Cut 5 Carrots into 2 inch chunks and put in a baking dish.
- Add 2 tablespoon Olive oil, 3 Garlic clove and 1 pinch Sea salt and ground black pepper and put into the oven for 35 minutes, stirring half way through.
- Take the carrots out of the oven and add 1 handful Fresh parsley and stir.
