Description
This recipe starts by gently cooking thick-cut bacon in a frying pan over medium heat until it releases flavorful fat but remains tender. Then a mixture of sliced mushrooms—in various types—and thinly sliced onions are added and cooked over medium-high heat until most of the mushrooms' moisture evaporates and they start to brown. Reducing to medium heat, the onions soften further. Finally, minced garlic is added and cooked briefly to release its flavor without burning. The dish is seasoned with salt and black pepper to taste.
The resulting combination is a savory, slightly smoky accompaniment with tender mushrooms infused by bacon fat and aromatic garlic and onions. Ingredients
- ½ lb Bacon thick cut
- 2 lb mushroom sliced, mixed varieties
- 1 medium onion thinly sliced
- 2 cloves garlic finely minced
- salt to taste

Instructions
- Add the bacon to a large frying pan over medium heat. Let it cook until the fat releases and it is cooked but not crispy, about 10 minutes.
- Add the mushrooms and turn the heat to medium-high. Let the mushrooms cook until their liquid mostly evaporates, about 6-7 minutes, then reduce the heat to medium. Add the onion and cook for 5 minutes more.
- Add the garlic to the pan and let it cook for about 1 minute. Season to taste with sea salt and black pepper.
