Ingredients
- 8 ounces wide rice noodles
- 3 cups broccoli florets
- 1 tablespoon olive oil
- 8 ounces flank steak sliced against the grain, sliced
- 3 teaspoons garlic about 3 cloves, minced
- 8 ounces mushroom sliced
- ¼ cup brown sugar packed
- ½ cup soy sauce reduced-sodium
- 2 tablespoons hoisin sauce
- 2 teaspoons sesame oil
- ¼ teaspoon ground ginger
- ¼ teaspoon red pepper flakes crushed
- ¼ teaspoon black pepper
- 1 tablespoon cornstarch
Instructions
- Bring a large pot of water to a boil. Cook 8 ounces wide rice noodles according to package directions. Add 3 cups broccoli florets in the last 5 minutes of cooking and let them cook until tender. Drain the noodles and broccoli.
- While the pasta is cooking, add 1 tablespoon olive oil to a medium-sized skillet. Cook 8 ounces sliced flank steak until no longer pink. Add 3 teaspoons minced garlic , and 8 ounces sliced mushrooms and cook for a minute more.
- In a small bowl whisk together ¼ cup packed brown sugar, ½ cup reduced-sodium soy sauce, 2 tablespoons hoisin sauce, 2 teaspoons sesame oil, ¼ teaspoon ground ginger, ¼ teaspoon crushed red pepper flakes, ¼ teaspoon pepper, and 1 tablespoon cornstarch.
- Add the noodles to the skillet, pour the sauce on top, mix and toss until incorporated, and cook for 2-3 minutes until heated through.
