Garlic Broccoli Stir Fry
Description
The preparation begins by boiling broccoli florets briefly in salted water with sesame oil to retain color and initiate cooking. Without draining, the broccoli is transferred to a wok where chopped garlic is fried slowly over low heat to release aroma. The broccoli is added next and stir-fried over higher heat with salt and oyster sauce or a combination of soy sauce and sugar to provide savory and slightly sweet seasoning.
This cooking method keeps the broccoli tender but crisp and bright green, with the oyster sauce adding umami depth and the garlic giving a fragrant base aroma. A finishing touch of sesame oil adds a hint of nuttiness on the palate. The dish is served warm as a simple vegetable side that complements a variety of main courses.
Ingredients
- 1 broccoli separated into florets, head
- 1 tbsp. vegetable oil
- 2 garlic finely chopped, cloves
- pinch salt
- 1/4 tsp. sesame oil
- 1/2 tbsp. oyster sauce , or 1/2 tbsp. light soy sauce + 1/8 teaspoon sugar
Instructions
- Bring enough water to a boil in a large pot, add pinch of salt and 1/4 teaspoon sesame oil and then cook broccoli for around 1 minute. Transfer out. (No need to drain)
- Heat cooking oil in wok and fry chopped garlic until aroma over slow fire, then turn up the fire and slide broccoli in.
- Add salt and oyster sauce, mix well. And serve warm.
