Garlic Butter Asparagus Recipe
Description
In this recipe, butter melts gently in a pan before chopped almonds and both sliced and minced garlic are cooked until the almonds brown and the garlic crisps slightly. This initial step imparts deep toasted and aromatic qualities to the butter, which then flavors the asparagus when added. The asparagus cook time is moderate, allowing them to soften but retain some bite and color.
The garlic butter mixture is returned to the pan once the asparagus is tender, and lemon juice is squeezed over. This citrus element cuts through the richness and highlights the freshness of the asparagus. Salt seasoning is adjusted to taste to finish the dish.
The recipe notes suggest that asparagus can be cooked whole with ends snapped off if preferred, highlighting flexibility in preparation.
Ingredients
- 1 tablespoon butter
- ¼ cup almonds chopped
- 4 cloves garlic 2 sliced and 2 minced
- 1 lb asparagus cut into 2" pieces (see notes)
- lemon juice juice from 1 lemon
- salt to taste, sea salt
Instructions
- Melt the butter in a large pan over medium heat. Add the almonds and garlic and cook until the almonds start to brown and the sliced garlic begins to crisp, about 5 minutes. Remove from the pan with a slotted spoon.
- Add the asparagus and cook, stirring occasionally, until it begins to soften, about 8 minutes.
- Once the asparagus is soft, add the almonds and garlic back into the pan and squeeze the lemon over the top. Season to taste with salt.
Notes
- The asparagus may be cooked whole by snapping off the tough ends before proceeding with the recipe.
