Garlic Butter Mushrooms

Garlic Butter Mushrooms are sautéed button mushrooms cooked slowly in a mix of butter and olive oil until tender and browned, then tossed with crushed garlic, fresh parsley, and optionally lemon juice. They offer a savory, aromatic side with a juicy texture and buttery flavor.

Description

This recipe uses 600 grams of whole button mushrooms sautéed in butter and olive oil over medium-high heat. The mushrooms are initially cooked without stirring to develop a browned, caramelized surface, which enhances flavor and texture. After flipping each mushroom, they cook further to ensure even doneness.

Crushed garlic and chopped fresh parsley are added near the end of cooking to impart a fresh, pungent aroma without burning the garlic. A splash of fresh lemon juice can add brightness and balance to the rich, buttery mushrooms. Seasoning with salt and black pepper brings out the natural earthiness of the mushrooms and the savory qualities of the butter.

These mushrooms make a versatile accompaniment to dinners or can be served over toast or mixed into pasta and risotto. Their preparation emphasizes slow cooking to achieve a tender inside with flavorful, golden edges.

The notes mention that button mushrooms are commonly used in Australia and suggest cremini mushrooms as a U.S. equivalent. Calorie counts vary based on the specific ingredients and cooking method.

Ingredients

Servings
  • 600 g button mushrooms 1.3 lbs - whole (see notes)
  • 3 tablespoon butter salted
  • 1 tablespoon olive oil
  • 2 tablespoon parsley finely chopped, fresh
  • 4 garlic crushed/minced, cloves
  • 1 tablespoon lemon juice optional, fresh
  • salt to taste
  • black pepper to taste

Instructions

  1. In a large frying pan, heat butter (3 tbsp) and olive oil (1 tbsp) over medium high heat.
  2. Add mushrooms (600g/1.3 lbs) to pan and mix to coat them in the butter/oil mixture.
  3. Spread mushrooms out on the base of the pan in a flat, even layer as best you can. Allow to fry for 8-9 minutes without moving.
  4. Flip the mushrooms over one by one, and them let them fry (again without moving) for a further 8-9 minutes.
  5. Add crushed garlic (4 cloves) and parsley (2 tbsp) to pan, mixing to coat and fry for another minute.
  6. Add lemon juice (1 tbsp) to pan if using, then give it all a mix. Add salt and pepper to taste and serve immediately.

Notes

  • Button mushrooms are commonly available and suitable for this dish; cremini mushrooms make a good substitute in the U.S.
  • Cook mushrooms without stirring initially to allow browning and caramelization for enhanced flavor.
  • Add garlic only near the end to prevent burning and preserve its fresh flavor.
  • Use fresh lemon juice to add brightness if desired.
  • Calorie counts are approximate, as ingredients and cooking methods can affect nutritional values.
