Garlic Butter Steak Bites
Description
Garlic Butter Steak Bites feature cubed ribeye steak quickly seared in a hot pan to develop a brown crust while maintaining juiciness inside. The steak is seasoned with kosher salt, black pepper, and red pepper flakes for gentle heat. After searing, the pan is reduced to medium-low heat to simmer a garlic butter sauce with diced shallots and minced garlic, which coats the steak pieces, enhancing them with rich, aromatic flavors. The dish is finished with a sprinkle of finely chopped parsley, adding brightness and a touch of freshness.
The steak bites' texture balances a tender interior with a slight crispness on the edges due to the high-heat searing. This recipe relies on the quality of the steak and the careful timing of cooking steps to ensure the meat remains soft yet flavorful. The garlic butter sauce complements the beef without overpowering, providing a savory coating that pairs well with simple sides or crusty bread to soak up the sauce.
When storing leftovers, it is best to cool the steak bites completely before refrigerating them in an airtight container for up to four days. Freezing is possible with the sauce to keep the bites moist, and reheating gently in a skillet with added butter or oil is recommended over microwaving to preserve texture.
Ingredients
- 1 ½ pounds ribeye steak cut into bite-sized pieces, or sirloin or filet mignon steak
- 2 teaspoons kosher salt
- 1 teaspoon black pepper ground
- ½ teaspoon red pepper flakes
- 1 tablespoon olive oil
- 4 tablespoons butter
- 1 shallot finely diced (about ¼ cup, medium
- 6 garlic minced, cloves
- ¼ cup parsley finely chopped, or other fresh tender herbs like oregano or thyme
Instructions
- Season the steak. Pat the cubed steak dry with a paper towel, then season with salt, pepper, and red pepper flakes.
- Sear the steak. Heat a large cast-iron pan over medium-high heat. Once the pan is hot, add the oil. After the oil starts shimmering, add the steak bites in a single layer. Sear for about 1 to 2 minutes on each side, until browned. Then remove the steak to a plate.
- Make the garlic butter sauce. Reduce the heat to medium-low, then add the butter, shallot, and garlic, and saute for 1 minute.
- Finish the steak bites. Add the steak bites back to the pan and stir with the garlic butter sauce to coat. Remove the pan from the heat and stir in the chopped parsley.
Notes
- Use a cast-iron skillet for best searing results, but stainless steel works if preheated well.
- Store leftovers cooled in an airtight container in the fridge for up to 3-4 days.
- Freeze steak bites with leftover butter sauce in a freezer-safe container for up to 3 months.
- Reheat gently in a skillet over medium heat with butter or oil to maintain texture instead of microwaving.
