Ingredients
- 1 pound steak (ribeye, sirloin, or flank), thinly sliced
- 2 tablespoons vegetable oil
- 4 cloves garlic, minced
- 1 small onion, chopped
- 2 cups cooked rice (preferably day-old)
- 1 cup frozen peas and carrots
- 3 tablespoons soy sauce
- 2 tablespoons unsalted butter
- 2 large eggs, beaten
- ¼ cup chopped green onions
- salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced steak and cook until browned and cooked to your desired doneness. Remove the steak from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and chopped onion. Sauté until the onion is softened and fragrant, about 3-4 minutes.
- Add the cooked rice to the skillet and stir to combine with the garlic and onion.
- Stir in the frozen peas and carrots, and cook until they are heated through.
- Push the rice mixture to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until fully cooked, then mix them into the rice.
- Add the cooked steak back to the skillet and stir to combine.
- Drizzle the soy sauce over the rice mixture and stir to coat everything evenly.
- Add the unsalted butter to the skillet and stir until melted and well combined with the rice.
- Season with salt and pepper to taste.
- Garnish with chopped green onions and serve hot.
