Young Chow Fried Rice (Yang Chow Fried Rice)

Young Chow fried rice is a fried rice dish packed with shrimp, ham, eggs, and vegetables. The colorful blend of textures and flavors will make your taste buds sing!

Ingredients
- 2 tbsp oil olive or avocado
- 1 medium onion diced
- 1/2 lb sausage or cooked ham, diced
- 1/2 lb Shrimp peeled and deveined
- 1 cup frozen sweet peas thawed
- 5 cups cooked white rice day old
- 3 tbsp soy sauce low sodium
- 1/3 cup green onions
- 3 large eggs beaten
- 1 tsp salt adjust to taste
Instructions
- Preheat a wok with 1 tbsp oil. Add in the onion and cook until it's softened and translucent.
- Add sausage and cook for about three minutes or until heated through.
- Add shrimp and cook until it starts turning pink. Mix in green peas and toss together for about 2 minutes. Remove from the pan and set aside.
- In the same wok, preheat 1 tbsp of oil on high. Add in the cold rice and spread it evenly on the bottom of the pan. Cook for a few minutes.
- Add the shrimp mixture, soy sauce, and green onions to the rice, and toss them together.
- Spread the mixture creating an open center area of the wok. Add the beaten eggs and as they cook, break them lightly with a spatula into pieces.
- Season to taste and enjoy!
