Description
This rice dish begins with refrigerated, cooled rice which helps prevent clumping during stir-fry. The garlic, onion, and diced carrot are sautéed until softened, infusing the oil and rice with flavor. The rice is then added and broken apart, stir-fried to develop a slightly toasted texture.
Beaten eggs are poured in and scrambled within the rice mixture, adding protein and richness. Soy sauce seasons the dish with saltiness, and sesame oil can be added for a subtle nutty aroma. Peas provide bursts of color and mild sweetness. The dish is finished with thinly sliced green onions for freshness.

Ingredients
- 2 cups rice preferably day-old rice basmati, long grain or jasmine, cooked and cooled
- 4 cloves garlic minced
- ½ onion finely diced, small
- 2 tablespoons vegetable oil
- 2 egg beaten, large
- ½ cup peas frozen
- ½ cup carrot diced
- 2 tablespoons soy sauce
- ½ teaspoon sesame oil optional
- salt to taste
- black pepper to taste
- green onions thinly sliced (for garnish)
Instructions
- Leftover rice is best, but if making it fresh, ensure it is completely cold.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add the onion and carrot and sauté for 3 minutes until soft. Add the garlic and cook for a further minute.
- Stir in the cooled rice. Break up any rice clumps and stir-fry for 3-5 minutes.
- Pour in the beaten eggs, and cook, stirring, until scrambled.
- Add in the soy sauce and continue stir-frying for 2-3 minutes. Optionally, add sesame oil for extra flavor. Season with salt and pepper to taste.
- Remove from heat and garnish with thinly sliced green onions.
