Ingredients

Servings
  • 1 pound fresh green beans ends trimmed and cut in half
  • 2 tablespoons olive oil
  • 4 cloves garlic thinly sliced
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • ½ teaspoon salt

Instructions

  1. Add the green beans to a large skillet and cover with cold water.
  2. Place on the stove over high heat and bring the water to a boil.
  3. Once the water is boiling, reduce the heat on the stove to medium-low and simmer until the beans start to soften, this should take about 5 minutes.
  4. Drain the water and place the skillet with the green beans back on the stove.
  5. Increase the heat on the stove to medium-high and add olive oil to the skillet with the green beans.
  6. Add the sliced garlic to the skillet and cook for 2-3 minutes, stirring occassionally.
  7. Add the lemon juice, zest and salt to the skillet.
  8. Toss together and cook for an additional 1-2 minutes.
  9. Remove from the heat and serve immediately.

Notes

  • To make this recipe with canned green beans, do not boil the green beans. Instead, start the recipe by adding the olive oil to a large skillet over medium-high heat on the stove. Once the oil is hot, drain two (14.5 ounce) cans of green beans and add them to the skillet, along with the sliced garlic cloves. Saute for 2-3 minutes, then add the lemon juice, zest and salt to the pan. Toss everything together and continue to cook for an additional 1-2 minutes.
  • You can easily double or triple this recipe. The recipe serves 4 as a side dish. The ingredient amounts will automatically update to reflect the new serving size.
