Garlic Green Beans Recipe
Description
Garlic Green Beans Recipe highlights fresh haricot verts or green beans blanched briefly to maintain a bright color and crisp-tender bite. They are enhanced by sautéing garlic, shallots, and red pepper flakes in olive oil until fragrant, then combined with the beans for even coating. The dish finishes with flaky salt and lemon zest, giving a nuanced savory and citrus element. The preparation focuses on balancing the gentle heat of red pepper flakes with fresh garlic aroma.
The cooking method preserves the beans' texture by using a quick blanch followed by sautéing, avoiding overcooking. The garlic and shallots infuse the oil, which then coats each bean, brightened at serving with lemon zest and flaky sea salt for an appealing finish. This side complements a range of main dishes by adding a lightly spicy, aromatic vegetable option.
You can prep the green beans ahead by blanching and cooling them rapidly in ice water, storing them in the fridge for a day or two. Just finish cooking with garlic and shallots on serving day to keep the best texture.
Ingredients
- 1 pound haricot verts ends trimmed, or green beans
- 2 tablespoons olive oil
- 6 cloves garlic chopped
- 1 shallot thinly sliced
- 1-2 teaspoons red pepper flakes depending on how spicy you like them
- salt flaky; to garnish
- lemon zest flaky; to garnish
Instructions
- Bring a large pot of water to a boil.
- Add the green beans and cook for 3 minutes. Drain the green beans and set aside.
- In a large heavy bottom skillet, heat the olive oil over medium high heat. Add the shallot, garlic and red pepper flakes and sauté for 2 minutes until the garlic becomes fragrant. Add the green beans and mix everything together, making sure the garlic and shallots are evenly distributed amongst the green beans.
- Season with salt and the lemon zest and serve immediately.
Notes
- Blanch green beans quickly to keep them crisp before sautéing with garlic and shallots.
- If preparing ahead, cool blanched beans in an ice bath and store refrigerated up to two days.
- Finish cooking the beans in garlic oil just before serving to maintain texture and flavor.
