Description

After rinsing and trimming bok choy, the larger leaves are halved lengthwise for even cooking. Heat a wok or pan with neutral cooking oil over high heat, then add minced garlic, stirring until aromatic. Shiitake mushrooms with stems removed are quickly cooked with the garlic before adding the bok choy.

Salt seasons the vegetables as they stir-fry. The leaves wilt gently while the stems remain crisp, offering texture contrast. Cooking proceeds until just tender, preserving freshness and bright flavor. The result is a simple, lightly seasoned vegetable dish with an umami note from mushrooms.

  • 1 1/2 tablespoons neutral cooking oil generic cooking oil
  • 3 cloves garlic minced
  • 4 oz (120g) shiitake mushrooms stem removed and sliced
  • 10 oz (280g) bok choy rinsed and drained
  • 1/4 teaspoon salt or to taste

Instructions

  1. Rinse the bok choy with cold water and drain it. Cut and remove the lower part of the bok choy stems. Slice the larger leaves lengthwise in half. Set aside.
  2. Heat a wok or pan over high heat and add the oil. Once the oil is heated, add the garlic and stir-fry until aromatic. Next, add the mushrooms and do a few quick stirs before adding the bok choy.
  3. Add salt and continue to stir-fry until the leaves are wilted while the stems remain crisp. Turn off the heat and serve the garlic mushroom bok choy immediately.

Notes

  • For a deeper flavor, substitute 1/2 tablespoon of Chinese bottled oyster sauce for the salt if available.
