Garlic Noodles (The Secret Recipe!)
Description
This Garlic Noodles recipe starts with rinsing yellow noodles to remove excess oil, then boiling them until al dente for a chewy texture. Meanwhile, a garlic sauce is prepared by gently sautéing minced garlic in melted butter, then combining it with Maggi seasoning, oyster sauce, fish sauce, and sugar to create a balanced umami-rich base. The cooked noodles are tossed with this sauce to evenly coat them.
The dish is finished with Parmesan cheese tossed in, which rounds out the flavors and adds richness. The texture is pleasantly tender with a garlicky, savory profile enhanced by the blend of seasonings. This straightforward preparation emphasizes the sauce's flavor without heavy additions.
For serving, the noodles are best enjoyed hot and fresh. Substitutions like spaghetti or linguine noodles can be used if yellow noodles are unavailable. Alternative seasonings such as Braggs Liquid Aminos or Golden Mountain sauce can replace Maggi seasoning. For a milder flavor, reducing or doubling oyster sauce in place of fish sauce is suggested.
Ingredients
Garlic Sauce:
- 1 tick butter unsalted
- 2 tablespoons garlic minced, or more to taste
- 1 tablespoon maggi seasoning sauce
- 1 tablespoon oyster sauce
- 1 tablespoon fish sauce
- 1 tablespoon sugar
Instructions
- Rinse the yellow noodles under running water to remove excess oil. Drain and set aside.
- Heat up a pot of water until boiling. Add the noodles into the boiling water and cook the noodles until al dente (you want it to still have a good chewy bite), or for a few minutes. You can taste the texture of the noodles while cooking. Do not overcook as the noodles will turn soggy. Transfer the noodles out and drain dry.
- To prepare the Garlic Sauce, heat a sauté pan over medium to low heat. Add the butter to the pan and allow it to melt. Once melted, add the garlic and sauté until aromatic but not browned. Next, add all the seasonings to the pan and stir well to combine. Transfer the garlic sauce to a small bowl.
- To serve, simply toss all the noodles with the garlic sauce until evenly coated. Then, add the Parmesan cheese and toss again to ensure everything is well combined. Serve immediately while hot and enjoy!
Notes
- Serve an individual portion by mixing noodles with garlic sauce to taste and topping with grated Parmesan cheese before eating.
- If yellow noodles are not available, spaghetti or linguine makes a suitable substitute.
- Maggi seasoning sauce can be replaced with Braggs Liquid Aminos (gluten-free) or Thai Golden Mountain Seasoning Sauce depending on availability.
- To reduce strong fish sauce flavor, use double the amount of oyster sauce instead.
