Garlic Parmesan Pasta starts with spaghetti cooked to al dente and drained, reserving some pasta water. Butter is melted and garlic is cooked briefly to release aroma without browning. The pasta is then returned to the pot, combined with milk and the reserved starchy water to loosen the sauce. Gradually stirring in freshly grated Parmesan cheese creates a creamy coating that clings to the noodles. Seasoning with salt and pepper adjusts the final flavor.The sauce is not heavy cream based but creamy from the cheese and butter, offering a smooth texture with garlic's aromatic presence. Ingredients

  • 16 ounces spaghetti noodles
  • 1/4 cup butter (diced into smaller pieces)
  • 1/2 cup milk
  • 1 Tablespoon garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup Parmesan Cheese grated

Instructions

  1. Bring water to a boil in a large pot. Add in the pasta and cook until the pasta is al dente based on the package instructions.
  2. Once cooked, reserve 1/2 cup of the pasta water and then drain the pasta.
  3. In the same large pot, melt the butter over low heat. 
  4. Add in the garlic and cook for 1-2 minutes until the garlic is fragrant. 
  5. Then add in the drained pasta, reserved pasta water and milk. Toss to thoroughly coat the pasta with the butter.
  6. Turn off the heat and stir in the parmesan cheese gradually. Toss to coat and melt the cheese. 
  7. Season with the salt and pepper. 
  8. Serve immediately while warm and enjoy!

Notes

  • Use freshly grated good-quality Parmesan for the best flavor and melting properties.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
