- Cook spaghetti: Cook the spaghetti according to package directions until al dente. Reserve about 1 cup of the pasta water before draining. Drain the pasta and set aside.
- Sauté garlic: While the pasta is cooking, heat the olive oil in a large skillet over medium-low heat. Add the minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes, stirring frequently, until the garlic is fragrant and lightly golden. Be careful not to burn the garlic.
- Combine pasta and garlic: Add the cooked spaghetti to the skillet with the garlic-infused oil. Toss to coat the pasta evenly.
- Add Parmesan and pasta water: Add the grated Parmesan cheese and about ½ cup of the reserved pasta water to the skillet. Toss vigorously until the cheese melts and the sauce becomes creamy and coats the pasta. Add more pasta water, a little at a time, if needed to achieve the desired consistency.
- Season and garnish: Season with salt and pepper to taste. Stir in the chopped parsley.
- Serve: Serve the Garlic Parmesan Spaghetti hot, with extra Parmesan cheese on top.
