  • 1 head cauliflower 1 ½ pounds
  • ¼ cup butter melted
  • 1 clove garlic minced
  • 1 teaspoon lemon zest
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons parsley chopped, fresh
  • 2 tablespoons Parmesan Cheese shredded

Instructions

  1. Preheat oven to 375°F.
  2. Trim leaves from cauliflower head. Place head in a dutch oven.
  3. Combine butter, garlic, lemon zest, salt, and pepper. Brush mixture on top of cauliflower head.
  4. Cover with foil (the steam helps cook it) and bake for 45-55 minutes or until cauliflower is tender.
  5. Remove foil, sprinkle on parmesan cheese and broil until the cheese is browned and crispy. Garnish with parsley, if desired.

Notes

  • For a softer texture, add 2 tablespoons of broth or water to the bottom of the baking dish to create additional steam during cooking.
  • If a dutch oven is not available, use any oven-safe dish covered tightly with foil to mimic the steaming effect.
