Garlic Prawn and Avocado Crostini

Creamy garlicky and lemon infused prawns and avocado on crispy crunchy toasted bread. Perfect for lunch, for a snack or for a Christmas appetiser idea!

Ingredients

Servings

Garlic Prawns:

  • 2 tablespoons olive oil infused with garlic
  • 2-3 cloves garlic minced
  • 1 teaspoon paprika sweet
  • ½ lemon about 1-2 tablespoons, juiced
  • 1.1 lbs king prawns no tail, peeled and deveined
  • ¼ cup parsley finely chopped, fresh

Avocado Salad:

  • 1 whole avocado cubed
  • 1 large tomato diced, ripe
  • ½ lemon about 1-2 tablespoons, juiced
  • 1 pinch salt to season
  • 1 loaf ciabatta cut into 1cm slices, or sourdough vienna bread

Instructions

  1. Preheat oven to grill/broil settings on medium - high heat. Place bread on a baking tray lightly greased with cooking oil spray or oil. Grill/broil until golden. Remove and set aside.

Garlic Prawns:

  1. Combine garlic, paprika, lemon juice and prawns in a bowl and mix well to combine the ingredients. Add salt to season (to your tastes). Drizzle garlic oil onto a large frying pan/skillet. frying pan. Heat over medium-high heat for about 3 minutes. Reduce heat to low. Add the parsley and cook for a further 2 mins until prawns change colour. Set aside.

Salad:

  1. Combine avocado, tomato, lemon juice and salt in a bowl, mixing well to combine. Add the prawns and fold through gently until just combined. Spoon prawn and avocado mixture onto toasted bread.

Notes

  • Can be served warm or cold!
