Garlic Sesame Noodles

Garlic Sesame Noodles combine ramen-style Yaki-Soba noodles with thinly sliced flank steak, red bell pepper, carrot, and broccoli, all coated in a savory sauce flavored with soy, garlic, brown sugar, sambal oelek, oyster sauce, ginger, and sesame oil. This stir-fried noodle dish balances tender meat, crisp vegetables, and a slightly spicy, umami-rich sauce, topped with green onions and sesame seeds for added texture and aroma.

Description

The recipe starts by preparing a sauce blending reduced sodium soy sauce, minced garlic, brown sugar, spicy sambal oelek, oyster sauce, fresh grated ginger, and sesame oil, which gives a layered flavor profile with salty, sweet, spicy, and nutty notes. The Yaki-Soba noodles are briefly boiled to loosen them before being drained.

Flank steak is quickly pan-seared to develop a browned crust but retain juiciness. Vegetables including bell pepper and carrot are then stir-fried until tender but still crisp. The noodles, broccoli, and sauce are combined in the skillet and cooked until the broccoli softens slightly and the sauce thickens, coating everything evenly. Steak is added back just before serving to warm through.

Garnishing with thinly sliced green onions and a sprinkle of sesame seeds completes the dish, adding freshness and crunch. This meal offers a vibrant mix of textures and a bold flavor favored in Asian-inspired noodle dishes.

The notes highlight that Yaki-Soba noodles are ramen-style and refrigerated, typically found in grocery produce sections, important when sourcing ingredients.

Ingredients

Servings
  • 2 yaki-soba noodles 5.6-ounce packages, refrigerated; seasoning sauce packets discarded
  • 1 tablespoon olive oil
  • 1 pound flank steak thinly sliced across the grain
  • 1 red bell pepper sliced
  • 1 carrot thinly sliced
  • 1 broccoli cut into florets, head
  • 1 green onion thinly sliced
  • ½ teaspoon sesame seeds

For the sauce

  • ¼ cup soy sauce reduced sodium
  • 4 cloves garlic, minced
  • 2 tablespoon brown sugar packed
  • 1 tablespoons sambal oelek ground fresh chile paste, or more, to taste
  • 1 tablespoon oyster sauce
  • 1 tablespoon ginger freshly grated
  • 1 teaspoon sesame oil

Instructions

  1. In a small bowl, whisk together soy sauce, garlic, brown sugar, sambal oelek, oyster sauce, ginger and sesame oil; set aside.
  2. In a large pot of boiling water, add Yaki-Soba until loosened, about 1-2 minutes; drain well.
  3. Heat olive oil in a large skillet over medium high heat. Add steak and cook, flipping once, until browned, about 3-4 minutes; set aside.
  4. Stir in bell pepper and carrot to the skillet. Cook, stirring frequently, until tender, about 3-4 minutes.
  5. Stir in Yaki-Soba, broccoli and soy sauce mixture until broccoli is tender and the sauce is slightly thickened, about 3-4 minutes. Stir in steak until heated through and evenly coated in sauce, about 1 minute.
  6. Serve immediately, garnished with green onion and sesame seeds, if desired.

Notes

  • Yaki-Soba noodles are ramen-style and usually found refrigerated at local grocery stores.
  • Discard seasoning packets that come with noodles as the recipe uses its own sauce.
  • Cook vegetables to maintain a tender-crisp texture for contrast with soft noodles and tender steak.
