Garlic Shrimp with Zucchini Noodles

Garlic Shrimp with Zucchini Noodles features sautéed shrimp and garlic tossed in a sesame oil and coconut aminos sauce, combined with fresh zucchini noodles. The result is a light, savory dish with tender shrimp and crisp zucchini, accented by a subtle balance of sweet, tangy, and umami flavors from the sauce.

Description

This recipe involves quickly sautéing garlic in sesame oil to release its aroma, then cooking peeled shrimp until they turn pink and tender. The sauce, made with coconut aminos, rice vinegar, ginger, honey, sesame oil, and a touch of cornstarch, is whisked together separately and then added to the pan.

Zucchini noodles are incorporated last, absorbing the flavorful sauce while maintaining their slight crunch. Heating the mixture a few minutes allows the sauce to thicken slightly due to the cornstarch, effectively coating the shrimp and noodles for well-rounded taste in every bite. Salt is added to taste to balance the flavors.

This dish serves as a low-carb, flavorful meal or light dinner. The freshness of the zucchini noodles contrasts with the savory, sweet, and tangy elements in the sauce, delivering a satisfying texture and flavor profile. It requires minimal prep and cooks quickly, making it practical for a weekday meal.
