Garlic Smashed Potatoes

These Garlic Smashed Potatoes transform tender baby yellow potatoes into a crispy, flavorful side dish by boiling, gently smashing, and roasting them with olive oil, fresh garlic, and thyme. Baking at a high temperature creates golden edges and a soft inside, highlighting the herb and garlic aroma. They are excellent for serving alongside roasted meats or as a snack with dips.

Description

Garlic Smashed Potatoes begins with boiling baby yellow potatoes until tender but not falling apart. The potatoes are then gently smashed flat on a baking sheet to increase surface area for crisping. Olive oil, minced garlic, and fresh thyme leaves are spread atop each potato before roasting in a hot oven to develop golden, crunchy edges. The roasting step concentrates the flavors from the garlic and herb while offering a contrast of crispy exterior and soft interior textures. These potatoes provide a savory, mildly herbaceous profile without added seasoning complexity beyond salt and pepper. They make a versatile side dish that complements grilled or roasted proteins.

Ingredients

Servings
  • 2 pounds yellow potatoes baby
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 tablespoon thyme fresh leaves
  • kosher salt to taste, freshly ground
  • black pepper to taste, freshly ground

Instructions

  1. Preheat oven to 450 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
  2. Place potatoes in a large saucepan and cover with cold salted water by 1 inch. Bring to a boil and simmer until just tender, about 15 minutes; drain well and let cool slightly.
  3. Place potatoes onto the prepared baking sheet. Using a flat dry measuring cup or glass, carefully smash the potatoes until flattened but still in one piece. Top with olive oil, garlic and thyme.
  4. Place into oven and bake for 25-30 minutes, or until golden brown and crisp.
  5. Serve immediately.
