Garlic Steak and Potatoes
Description
In Garlic Steak and Potatoes, sirloin steak is cut into evenly sized cubes for uniform cooking and seasoned using beef rub or salt and pepper. The potatoes, diced into half-inch cubes, are cooked in butter and olive oil, seasoned with Italian seasoning, and sautéed until they reach tenderness with slightly crisp edges.
Separately, the steak cubes are seared with fresh minced garlic in butter over medium-high heat to develop a golden brown exterior while maintaining desired doneness inside, ranging from medium-rare to well done. Once cooked, the potatoes are returned to the skillet and tossed with the steak to coat with the garlic butter sauce and flavors.
The dish is garnished with fresh parsley for a bright finish and served immediately to enjoy both components at their optimal texture and flavor. Cooking in a single layer and using fresh garlic ensure even searing and a rich butter sauce.
The notes offer guidance on steak doneness temperatures, the importance of uniform cuts for even cooking, and recommendations for storage, indicating leftovers maintain quality refrigerated for three to four days.
Ingredients
- 1 Tablespoon olive oil
- 4 Tablespoons butter divided
- 1 pound potato diced into ½ inch cubes, about 3 ½ cups, Yukon gold variety
- 4 garlic minced cloves
- 1 teaspoon Italian seasoning
- 2 teaspoons beef rub can also substitute salt & pepper
- 1 ½ pound sirloin steak cut into 1 inch cubes
- parsley freshly chopped for garnish
Instructions
- Rub the steak with beef rub and cut into 1 inch cubs. Set aside while you prepare the potatoes.
- Heat cast iron skillet over medium heat. Add olive oil and 2 Tablespoons of butter to the skillet. When the butter is melted add the potatoes to the skillet.
- Cook potatoes for four minutes without stirring. Sprinkle Italian seasoning on the potatoes and stir. Continue cooking for 6-8 minutes stirring a few times or until potatoes are fork tender. Remove from the skillet and set aside on a plate.
- Turn heat to medium high heat and add the remaining 2 Tablespoons of butter to the skillet. When butter is melted add steak and garlic to the skillet, making sure the steak is in an even layer. Sear for one minute. Flip steak with spatula or fork. Cook for 2-3 minutes or until golden brown and cooked to desired doneness.
- Add potatoes back into the pan and toss to coat.
- Garnish with chopped parsley if desired and serve immediately.
Notes
- Use a meat thermometer to check steak doneness: rare 120–130°F, medium rare 130–135°F, medium 135–145°F, medium well 145–155°F, well done 155°F and above.
- Cut steak and potatoes into even pieces to ensure even cooking and consistent texture.
- Cook steak pieces in a single layer for proper searing.
- Freshly minced garlic provides the best flavor for the butter sauce.
- Store leftovers in the refrigerator and consume within three to four days for best quality.
