Garlicky Swiss Chard and Chickpeas

Garlicky Swiss Chard and Chickpeas features sautéed swiss chard combined with chickpeas, shallots, and garlic in a lemony, savory broth. The addition of crumbled feta cheese brings a salty, creamy finish. The dish is hearty yet vegetable-focused, suitable as a side or light main dish.

Description

This recipe starts by wilting chopped swiss chard in olive oil and chicken or vegetable broth until tender. The broth helps cook the chard gently and infuses flavor. After draining, shallots and garlic are sautéed separately until softened and then combined with the chard and canned chickpeas, warming through. Fresh lemon juice brightens the mix while kosher salt and freshly ground black pepper season the dish. Just before serving, crumbled feta cheese is sprinkled on top, adding a creamy, salty contrast to the garlicky greens and beans. The texture balances tender greens with the creaminess of the chickpeas and feta.

Served warm, this dish can complement a variety of meals or stand alone as a satisfying vegetarian option.

Using fresh lemon juice and crumbled feta cheese are key to balancing the robust garlic and earthy chard flavors. Adjust seasoning to taste, especially salt and pepper, for best results.

Ingredients

Servings
  • 2 tablespoons extra virgin olive oil
  • 2 swiss chard center stems cut out and discarded, and leaves coarsely chopped, bunches
  • 2 cups chicken broth , or vegetable broth
  • 2 shallot finely chopped (about ½ cup, medium
  • 6 garlic pressed or minced, cloves
  • 15 ounce chickpeas rinsed and drained, canned
  • 2 tablespoons lemon juice freshly squeezed
  • salt to taste, Kosher salt and freshly ground
  • black pepper to taste, Kosher salt and freshly ground
  • ½ cup feta cheese crumbled

Instructions

  1. In a large skillet, heat 1 tablespoon of the olive oil over medium-high heat. Add half of the chard, and cook for 1 to 2 minutes. When the first half has wilted, add the remaining chard. When all of the chard is wilted, add the chicken broth. Cover the skillet and cook the chard until tender, about 10 minutes. Drain the chard through a fine strainer, and set it aside.
  2. Wipe out the skillet and heat the remaining 1 tablespoon olive oil over medium-high heat. Add the shallots and garlic and cook, stirring, until they are softened, about 2 minutes. Add the chard and chickpeas and cook until heated through, 3 to 4 minutes. Drizzle the lemon juice over the mixture and season with salt and pepper, to taste. Sprinkle the feta cheese on top just before serving.
