  • 1 cup zucchini skin on (about one medium zucchini, shredded
  • 1 clove garlic or 1/2 tsp garlic powder, minced
  • 10 mint finely chopped, or 1/2 tsp dried mint, leaves
  • 1 tsp salt divided, sea salt
  • ¼ tsp black pepper coarse
  • 1 cup yogurt whole milk
  • lemon juice optional, a squeeze

Instructions

  1. Heat a nonstick skillet over medium-high heat. Once heated, drizzle in the olive, add the zucchini, garlic, mint, salt, and pepper. Sautee until the zucchini has softened and has become translucent. 
  2. When ready, transfer the mixture to a mixing bowl. Next, add the yogurt, lemon juice (if using), and the other half of sea salt. Give a generous mix. 
  3. Enjoy right away or chill until ready to serve.

Notes

  • Divide sea salt usage: half during zucchini sauté and half after combining with yogurt for balanced seasoning.
  • Store leftovers in an airtight container in the refrigerator for up to three days.
