Description

This Garnachas recipe begins by thinning canned refried black beans with vegetable broth and simmering them until spreadable. Small yellow corn tortillas, approximately the size of street tacos, are fried in vegetable oil until very crisp on both sides. The crispy tortillas provide a sturdy, crunchy base.

Cabbage slaw made from finely shredded “angel hair” slaw is tossed with lime juice and salt to create a bright, fresh topping. Once the beans are spread thinly over the crisp tortillas, the slaw is layered on followed by crumbled queso fresco and optional Pico de Gallo salsa for added freshness and flavor.

These Garnachas can be served fresh, making them suitable for Mexican potlucks or casual gatherings. Homemade corn tortillas and refried beans provide a traditional touch, but store-bought products can be used for convenience. Salbutes variation involves substituting the beans with shredded chicken taco meat.

  • 24 small corn tortillas buy the tiniest “street taco” size, yellow
  • 4 tablespoons vegetable oil
  • 15 ounce refried black beans canned
  • 1 cup vegetable broth
  • 2 cups cabbage slaw look for “angel hair” slaw in bags
  • 1 tablespoon lime juice
  • 1 cup queso fresco crumbled
  • 1 cup Pico de Gallo optional
  • salt

Instructions

  1. Set a small sauce pot over medium heat. Add the refried black beans and vegetable broth. Stir well to mix, then simmer until the black beans are thin, but spreadable, about 10 minutes.
  2. Set a large nonstick skillet over medium heat. Add 1 to 2 teaspoons of oil to the skillet. Set a holding plate to the side and line it with paper towels. Once the oil is hot, fry 3 to 4 tortillas at a time, until very crisp. Make sure to flip and fry on both sides. Then move them to the holding plate and repeat with the oil and additional tortillas.
  3. Set out a medium mixing bowl. Add the cabbage slaw to the bowl. Then drizzle lime juice over the top. Sprinkle generously with salt and toss.
  4. Once the beans and tortillas are ready, assemble the Garnachas. Spread a tablespoon of thin refried black beans over the top of each crispy tortilla. Then top with a sprinkling of slaw, a sprinkling of pico de gallo, and a sprinkling of queso fresco.

Notes

  • These Garnachas are best served immediately to maintain the tortilla crispiness.
  • For authentic flavor, use homemade corn tortillas about 3 inches wide if possible.
  • Homemade refried black beans can be prepared using an Instant Pot as a substitute for canned beans.
  • To make Salbutes, replace the refried black beans with shredded chicken taco meat as a topping.
