Gebratene Maultaschen (Fried Maultaschen with Egg)

Gebratene Maultaschen is a hearty dish where sliced maultaschen—German stuffed pasta—are pan-fried in butter until lightly browned, then cooked with a whisked egg mixture flavored with herbs. The result is a dish combining crispy-edged pasta slices with a tender, herb-infused egg coating. Traditionally served as a complete meal, it offers a satisfying texture and savory flavor profile.

Description

In this recipe, pre-cooked sliced maultaschen are sautéed in butter over medium-high heat until golden brown on all sides. A seasoned egg mixture blended with chopped parsley or similar herbs is poured over the maultaschen. Cooking continues on medium heat while occasionally turning the pieces so the eggs set evenly and coat the pasta slices. The combination yields crispy edges on the maultaschen with a soft, well-seasoned egg wrapping.

Gebratene Maultaschen are typically served alone as a filling main dish, but they also pair nicely with a fresh leafy green salad to provide brightness and contrast to the rich, buttery flavors. Garnishing with additional fresh herbs enhances both appearance and flavor.

Ingredients

Servings
  • 1 pound maultaschen (click link for recipe), cut into 1/2 inch slices
  • 3 tablespoons butter
  • 4 large egg whisked
  • 2 tablespoons parsley chopped, or chives or green onions or combination
  • salt to taste
  • black pepper to taste

Instructions

  1. Whisk the eggs in a small bowl with some salt and pepper.  Whisk in the chopped herbs. Set aside.Heat the butter in a non-stick skillet over medium-high heat and add the Maultaschen, lightly browning them on all sides. Spread them out so they're in a single layer. Pour the egg mixture over the Maultaschen and turn the heat down to medium. Let the eggs cook, turning the Maultaschen once the eggs begin to set. Turn them another time or two until the eggs are fully cooked. Serve immediately garnished with some chopped parsley or chives. Gebratene Maultaschen are usually served as a complete meal without any sides, but a leafy green salad is always a nice accompaniment.
