General Tso Shrimp

General Tso Shrimp is a quick stir-fry featuring shrimp cooked until pink and curled, coated in a glossy, thick sauce made from soy sauce, brown sugar, rice vinegar, and chili sauce for a balanced sweet-spicy flavor. Garlic, ginger, and scallions enhance the aroma and taste, while cornstarch in the sauce provides a desirable sheen and body. This dish offers a lively seafood option inspired by the popular General Tso's flavor profile.

Description

The recipe calls for a homemade sauce blending vegetable stock, soy sauce, brown sugar, rice vinegar, Asian chili sauce, and cornstarch, shaken well before cooking. Shrimp is cooked in vegetable and sesame oils with minced garlic and ginger until pink and opaque, turning tightly curled. After cooking, the shrimp is removed while the pan is wiped clean to control oil levels.

Heating the sauce in the pan thickens it quickly due to the cornstarch. The shrimp and sliced scallions are then returned to the pan and stirred to coat evenly with the thick, glossy sauce. The dish is served immediately to enjoy the sauce’s texture and the shrimp’s tender bite.

General Tso Shrimp offers a contrasting flavor of sweet, sour, and spicy notes with the familiarity of shrimp texture, making it suitable as a main dish accompanied by rice or vegetables.
