General Tso's Tofu
Description
The preparation begins by pressing moisture out of an extra firm tofu block to firm it before slicing into bite-sized cubes. The cubes are coated in cornstarch and pan-fried in oil until browned and crisp on all sides. This method gives tofu a satisfying crunch and prevents sogginess when sauced.
The sauce combines brown sugar, hoisin sauce, rice vinegar, ketchup, soy sauce, water, optional red pepper flakes for mild heat, and fragrant sesame oil with chopped green onions and fresh ginger. After frying the tofu, the pan is cleaned, and the sauce ingredients are cooked rapidly to develop aroma and thicken slightly before the tofu is returned to coat well.
This dish pairs well with steamed rice or vegetables for a complete meal. The ginger and green onion offer fresh aromatic notes, while the sweetness and acidity from the sauce balance the crispy tofu texture.

- 1-2 TBS canola oil or vegetable oil
