German Chocolate Brownies
Description
This recipe creates German Chocolate Brownies by topping a baked and cooled chocolate brownie pan with a cooked frosting made from evaporated milk, sugar, egg yolk, and butter heated on the stove until it thickens. After removing from heat, vanilla extract, chopped toasted pecans, and sweetened shredded coconut are stirred in and spread evenly over the brownies.
The toasted pecans add a crunchy texture, while the coconut provides a chewy contrast to the moist chocolate brownie base underneath. The slow heating of the frosting ingredients ensures a caramel-like richness and silky finish, which sets upon cooling. Placing the brownies briefly in the refrigerator or freezer helps firm the frosting layer for easier cutting and serving.
To toast pecans, cook them in a dry skillet over medium heat while stirring until fragrant, but careful not to burn them. This step enhances the nutty flavor in the topping. The brownies serve well as a dessert for gatherings and can be refrigerated to maintain freshness.
Ingredients
- brownie boxed or homemade, cooked and cooled, one 8x8 or 9x9 pan
- 2/3 cup evaporated milk full fat
- 2/3 cup granulated sugar
- 1 egg beaten, large, yolk
- 5 tablespoons butter cut into pieces, unsalted
- 1 1/2 teaspoons vanilla extract pure
- 2/3 cup pecan see note, chopped, toasted
- 1 3/4 cups coconut sweetened shredded
Instructions
- In a medium saucepan over medium heat, combine evaporated milk, sugar, egg yolk and butter. Bring to a simmer and cook for 8-10 minutes, whisking frequently.
- Remove from the heat and stir in vanilla extract, pecans and coconut. Spoon onto the brownies and carefully spread the frosting into an even layer.
- Cool completely (until the frosting has firmed up a bit) before cutting. You can speed along the cooling by placing the brownies in the refrigerator or freezer for a short time. Don't leave them in too long or the brownies could dry out.
Notes
- Toast pecans in a dry skillet over medium heat, stirring frequently until fragrant to enhance flavor but watch closely to avoid burning.
- Cool the frosting completely on brownies before slicing to ensure clean cuts; refrigeration or short freezer time helps firm the topping.
