Description

Bratkartoffeln is a classic German dish made by pan-frying peeled and chopped potatoes in bacon fat and olive oil. Pieces of bacon are cooked first, and their fat is reserved for cooking the onions and potatoes, imparting smoky taste.

Onions are sautéed in the bacon fat until translucent, then temporarily set aside. Potatoes are fried in batches in a single layer with seasoning of salt, pepper, and paprika, covered and cooked on medium heat until tender, flipping halfway for even cooking and golden crispness. The cooked potatoes are then combined with the caramelized onions and cooked bacon, seasoned again as needed, and served warm.

Ingredients

  • 5 cups potato peeled and chopped
  • 1 onion finely chopped, large
  • 6 pieces Bacon
  • 2 Tablespoon extra virgin olive oil
  • salt to taste
  • black pepper to taste
  • paprika to taste

Instructions

  1. Chop potatoes and place in a bowl with water to prevent browning.
  2. Cook 6 pieces of bacon in a skillet over medium high heat. Move the bacon to a plate and reserve the bacon fat.
  3. Add chopped onion to bacon fat in the skillet and saute until onion is translucent. Using slotted spoon move cooked onion to the plate with the bacon.
  4. Place part of the peeled and chopped potatoes in a a single layer in the skillet. Season them with salt, pepper and paprika and cover pan with a lid. Cook on medium heat for about 25 minutes until potatoes are tender, flipping them halfway through.
  5. Repeat with remaining potatoes and each time add 1 Tbsp of olive oil or fat of your choice if needed.
  6. Place the pan fried potatoes in a dish and stir in the caramelized onions and bacon. Season with salt, pepper and paprika if needed and serve warm.
