  • 2 pounds potato red
  • 6 lices Bacon thick cut
  • 1 red onion finely diced, small
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon granulated sugar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon salt divided, + 1 teaspoon
  • ½ teaspoon black pepper ground
  • parsley optional, curly, for garnish

Instructions

  1. Boil potatoes in a large pan with 1 tablespoon salt until fork tender.
  2. Drain and run under cold water.
  3. Slice potatoes and add to large bowl.
  4. In a heavy skillet, cook bacon about half way done about 6-8 minutes/
  5. Add diced onions and continue cooking until bacon is crispy and onions are translucent.
  6. Remove from pan and drain well.
  7. Add to bowl.
  8. Gently stir to combine.
  9. In a small bowl, whisk together vinegar, sugar, mustard, 1 teaspoon salt and pepper.
  10. Pour over potatoes and stir to combine.
  11. Serve room temperature.
  12. Store leftovers in refrigerator.
