Ingredients
- 2 pounds potato red
- 6 lices Bacon thick cut
- 1 red onion finely diced, small
- 3 tablespoons apple cider vinegar
- 1 tablespoon granulated sugar
- 1 tablespoon Dijon mustard
- 1 tablespoon salt divided, + 1 teaspoon
- ½ teaspoon black pepper ground
- parsley optional, curly, for garnish
Instructions
- Boil potatoes in a large pan with 1 tablespoon salt until fork tender.
- Drain and run under cold water.
- Slice potatoes and add to large bowl.
- In a heavy skillet, cook bacon about half way done about 6-8 minutes/
- Add diced onions and continue cooking until bacon is crispy and onions are translucent.
- Remove from pan and drain well.
- Add to bowl.
- Gently stir to combine.
- In a small bowl, whisk together vinegar, sugar, mustard, 1 teaspoon salt and pepper.
- Pour over potatoes and stir to combine.
- Serve room temperature.
- Store leftovers in refrigerator.
