German Potato Salad Recipe

German Potato Salad features boiled red potatoes combined with a warm dressing made from bacon drippings, diced bacon, sautéed onions, vinegar, sugar, water, celery seed, salt, and coarse black pepper. The mixture is tossed with fresh parsley for a tangy, savory side dish with a balanced sweet and acidic flavor and tender yet firm potatoes.

Description

This potato salad starts by boiling red potatoes until tender but not falling apart. Separately, diced bacon is cooked until crispy, then drained except for 4 tablespoons of fat used to sauté diced onions until just browned. A dressing is prepared by adding white vinegar, water, sugar, salt, celery seed, and pepper to the pan and heating until boiling and sugar is dissolved.

The hot dressing is poured over the drained potatoes and mixed with chopped fresh parsley. Half of the cooked bacon is folded in immediately, and the remaining bacon is used as garnish. The result is a warm, slightly sweet and tangy salad combining tender potatoes with the smoky flavor of bacon and bite from onions, seasoned with celery seed and black pepper.

This salad is commonly served warm and pairs well with hearty meals and grilled dishes. Its combination of flavors and temperature distinguishes it from mayonnaise-based potato salads.

  • 2 pounds potato cut into 1" chunks, red
  • 8 lices Bacon , diced
  • 1 yellow onion , diced
  • 1/4 cup white vinegar
  • 2 tablespoons sugar
  • 2 tablespoons water
  • 1 teaspoon salt
  • 1 teaspoon celery seed
  • 1/4 teaspoon black pepper coarse ground
  • 1/4 cup parsley , chopped

Instructions

  1. Add the potatoes to a large pot covered with cold water and bring to a boil and cook for an additional 12-15 minutes or until you can easily pierce the potato with a small knife.
  2. In a large skillet cook the bacon on medium heat until crispy, then remove.
  3. Discard all but 4 tablespoons of bacon fat, then add the onion to the remaining bacon fat in the pan and cook on medium heat until it just starts to brown, about 4-5 minutes, stirring occasionally.
  4. Add in the vinegar, water, sugar, salt, celery seed and pepper and stir together until the mixture is boiling and the sugar is dissolved.
  5. Put the potatoes in a large mixing bowl, pour over the onion mixture and add in the parsley.
  6. Gently toss the mixture together until most of the dressing is absorbed then add in half the bacon toss together another few seconds and garnish with remaining bacon before serving.
