Full of flavor and texture, this salad is also incredibly easy and quick to throw together for a weeknight dinner or fulfilling meal-prepped lunch! Topped with hearty black beans, fresh tomatoes, frozen corn, creamy avocado, and tangy feta cheese, there's a whole lot to love!

Ingredients
Honey Lime Dressing:
- 1 1 lime zested
- 1/4 1/4 cup lime juice freshly squeezed, approximately 2 limes
- 2 2 garlic cloves minced
- 1 1 Tablespoon shallot finely chopped
- 2 2 Tablespoon honey
- 1/4 1/4 cup olive oil
- salt and pepper to taste
Salad:
- 4 4 cups romaine lettuce chopped
- 1 1 15-oz. can black beans drained and rinsed
- 1 1 red bell pepper diced
- 1 1 cup frozen corn rinsed in lukewarm water for 30 seconds to 1 minute, drained
- 1 1 avocado diced
- 1 1/2 1 1/2 Tablespoon Jalapeño finely diced
- 1 1 cup Cherry or grape tomatoes halved
- 2 2 Tablespoon fresh cilantro roughly chopped
- 1/2 1/2 cup feta cheese crumbles or cotija cheese
- Honey Lime Dressing to taste

Instructions
- Dressing: Whisk together lime zest, lime juice, garlic cloves, shallot, and honey in a medium bowl. Slowly pour in olive oil while whisking until all ingredients are emulsified. Salt and pepper to taste.
- Combine lettuce, black beans, red bell pepper, corn, avocado, jalapeño, tomatoes, cilantro, and feta in a large bowl. Toss with dressing and serve immediately.
Notes
- Run frozen corn under lukewarm water for 30 seconds to 1 minute to thaw.
- If not serving the salad immediately, reserve the avocado, feta, and dressing until ready to serve.
