This Dairy Free Beef Stroganoff is creamy, hearty and so flavorful! This classic comfort food is made healthier and without dairy or gluten. It is great for weeknight dinners, meal prep and leftovers!

Ingredients
- 1 pound ground beef
- ¼ cup diced onion
- 1 tbsp olive oil
- 1 tsp minced garlic
- 1 cup beef broth
- 1 tsp onion powder
- 1 tsp ground pepper
- 1 tsp ground mustard
- 1 tbsp tapioca flour or cornstarch
- ½ cup canned coconut milk
- 2 tbsp nutritional yeast
- cauliflower rice for serving
- parsley to garnish

Instructions
- First, add ground beef to a large skillet over medium heat. Cook until brown and crumbly, breaking up with spatula.
- Then, drain excess grease from pan. Add diced onion, olive oil and minced garlic to pan. Cook for 4 to 5 minutes or until onion is soft.
- Add in beef broth and all seasonings. Stir to combine. Cook on medium for 5 minutes.
- Remove ¼ cup of the liquid from skillet and add to a small bowl. Whisk in tapioca flour to liquid. Then, pour this slurry back into skillet and stir.
- Add in canned coconut milk and nutritional yeast to skillet. Stir to combine.
- Simmer for 10 to 15 minutes or until broth is creamy.
- Finally, serve with cauliflower rice if desired. Top with fresh parsley!
Notes
- Steak can replace ground beef if desired. I suggest using either sirloin steak (cut into 1 inch cubes) or beef stew meat. Brown meat before adding other ingredients.
- Use canned coconut milk. I recommend using the brand Thai. This can be found in the Asian food aisle at most grocery stores.
- Serve over cauliflower rice for Whole30 and Paleo, or grain free or gluten free pasta.
- Store leftovers in an airtight container in the fridge for up to 3 days. Store beef stroganoff and cauliflower rice or pasta separately.
